The Samoa Cake

Every year I bake my husband’s birthday cake. My daughter has asked me at least 75 times what type of cake we would make, every year I make something totally new. I had no clue what I would make until I noticed that “someone,” aka my husband, had eaten the only two boxes of Samoa cookies I bought. I didn’t even know he liked them. They are MY FAVORITE. As far as I am aware his favorite is Thin Mint. So those cookies in my mind were MINE.

After some funny arguing about how we have been married for 10 years and dang it Thin Mint is what he is supposed to like not my Samoas, I set out looking for a Samoa cake. And I found this! Whoohoo! Thank you Betsy Life!

IMG_1564Off I ran with my list to the store. I have never made a bunt cake so I found this pretty pan at Wal-Mart for $11.

I was also introduced to this. When my husband saw this can he got really happy. Apparently he has encountered it on his work trips to Brazil. As dessert they simply cut up bananas and pour this over top. I tasted some from the can. It is really good.

If you haven’t been introduced to baking spray with flour in it, go get some. Look at how lovely this cake turned out. No sticking what so ever.  The cake stand is hand thrown porcelain made by yours truly.

For the full details on how to make this cake check out Betsy Life. The only deviation I had was for the baking time. Possibly because my pan is super thin. I had a baking time of 45 mins instead of an hour. Also, as with most baking experiences, I made a major mess in my kitchen, and it took me a good part of the afternoon to create this wonder cake.

Look at that marbling! Perfect.  I give this cake an A +. The cake itself was moist and not overly sweet. The frosting was so good. The toasted coconut with the frosting, I could eat a bowlful. All together an awesome cake and unlike anything I have ever had before.
